Getting it exactly right

When processing shrimp, it’s easily possible to overcook it, by going above 80 °C or perhaps undercooking it, by leaving grey spots. The OctoFrost™ IF Cooker is specially designed to avoid that, by introducing the OctoFrost™ Crossflow System, consisting of three zones:

  • The first zone quickly heats the product during the first few seconds, to avoid melanosis
  • The second zone reduces the heat while boiling it with hot water from overhead
  • The third zone further reduces the heat and is the longest, here the core and surface temperatures slowly come to a balance, without overcooking the shrimp

This “flat-belly” temperature curve is exactly what allows the heat to travel to the core of the shrimp, without damaging the exterior. The processing time is sped up, leading to highly efficient production rates at higher capacities, with 1,000 to 15,000 kg/h.


In addition to the advanced processing process, the OctoFrost™ IF Cooker has an extensive range of products it can work with. Designed for different shapes and sizes of shrimp (PD, PUD, HOSO, HLSO and EZ Peel), it also supports various infeed options: bulk, belt and tray, with a weighing belt for an even infeed, as well.
