How to achieve homogeneous cooking of shrimp

Temperature control is vital in cooking high-quality shrimp. Where steam cookers lack the necessary precision – OctoFrost™ IF Cooker takes the spotlight. The latest technological advancement in shrimp processing equipment avoids overcooking and produces the highest yield possible while ensuring the quality, delicacy and longevity of each piece.

Using the patented OctoFrost™ 3-temperature zones and the unique rain shower systems, it allows for precision in temperature control – within 0.2 °C of the chosen temperature!

With its first installation dating back to 2013, it is the most technologically advanced shrimp cooker across the entire industry! Find out here how it works.

Unique benefits

Thanks to the patent and ingenious design, the OctoFrost™ IF Cooker can provide and keep peak product quality, with a short and efficient preparation time. Minimal curling, natural colour, proper firmness and excellent taste are guaranteed, with the highest possible yield.

The OctoFrost™ IF Cooker supplies excellent energy efficiency thanks to its premium steam injection technology, which is injected into the water and as a result only requires a much smaller amount of energy for water heating. You can expect a 30-40% reduction in steam consumption, compared to traditional technologies, saving you costs overall.

Every part of the cooking process is easily available to be cleaned in place, resulting in extraordinary food safety ratings, even for small-sized peeled shrimp. The homogenous cooking ensures the IQF shrimp is completely safe for consumption. Additionally, the OctoFrost™ IF Cooker’s rain shower system ensures the fastest possible temperature transfer, with maximum protein retention across the entire process.

Getting it exactly right

When processing shrimp, it’s easily possible to overcook it, by going above 80 °C or perhaps undercooking it, by leaving grey spots. The OctoFrost™ IF Cooker is specially designed to avoid that, by introducing the OctoFrost™ Crossflow System, consisting of three zones:

  • The first zone quickly heats the product during the first few seconds, to avoid melanosis
  • The second zone reduces the heat while boiling it with hot water from overhead
  • The third zone further reduces the heat and is the longest, here the core and surface temperatures slowly come to a balance, without overcooking the shrimp

This “flat-belly” temperature curve is exactly what allows the heat to travel to the core of the shrimp, without damaging the exterior. The processing time is sped up, leading to highly efficient production rates at higher capacities, with 1,000 to 15,000 kg/h.

Flexibility

In addition to the advanced processing process, the OctoFrost™ IF Cooker has an extensive range of products it can work with. Designed for different shapes and sizes of shrimp (PD, PUD, HOSO, HLSO and EZ Peel), it also supports various infeed options: bulk, belt and tray, with a weighing belt for an even infeed, as well.

The OctoFrost™ IF Cooker can take in and work with clams, mussels and langoustines. It is perfect for extending your range of options without the need for additional food processing equipment.

All products are preserved as close to their original state as possible, without losing moisture, vitamins or letting the proteins break down.

The secret to all of this is the OctoFrost™ IF Cooker’s ability to supply hot rain shower at precisely the set temperature, across various phases of cooking. This results in shrimp that keeps all its nutritional properties, evenly cooked and ready for further seafood processing down the line.

Homogenous cooking ensures the shrimp’s texture, flavour and quality are the same across the entire process, ready to be processed and packaged for further consumption down the road! The OctoFrost™ IF Cooker supplies premium control and flexibility in the cooking process, which is crucial when cooking shrimp.
